Mix Captain
Station Responsibilities and Checklists
The mix captain is responsible for leading the mix team by training, delegating, overseeing, and participating in the following tasks. The Mix Captain is responsible for:
- Safely operating mixing equipment and accessories ย
- Mixing dough according to daily production
- Meeting quality standards in a timely manner
- Appropriately managing starter
- Operating the production spreadsheet to access recipes and daily output information
- Stretching and folding dough
- Managing dough timelines/fermentation
- Coordinating with the Table Captain for shaping
- Cleaning, organizing, and maintaining the mix station according to posted instructions
- Verifying ingredient inventory for current and next shift
- Filling flour bins and pulling butter for overnight softening
- Communicating relevant information to the other Station Captains, Shift Leads, and/or Managers
- Training new hires and assistants on the mix stationย
