Lamination Captain
Station Responsibilities and Checklists
The Lamination Captain is responsible for leading the lamination team by training, delegating, overseeing, and participating in the following tasks. The Lamination Captain is responsible for:
- Safely operating the sheeter and pastry accessories
- Checking inventory of croissant dough sheets and butter sheets
- Laminating croissant dough
- Meeting quality standards in a timely manner
- Coordinating with the Table Captain through pastry rollouts
- Cleaning, organizing, and maintaining the lamination station and sheeter according to posted maintenance checklists
- Communicating relevant information to the other Station Captains, the Shift Lead, and Managers
- Training new hires and assistants on sheeter operation, maintenance, cleaning, pastry rollouts, shaping standards, and quality standards .
