This is a high-level leadership position on the Proof production team. A Shift Lead oversees production shifts at the bakery ensuring proper workflow management and adherence to procedural and quality standards while facilitating communication and decision-making of the production team. A Shift Lead strategically participates in production to relieve pressure and keeps the shift and shift hand-offs running smoothly. A Shift Lead reports to the Bakery Manager.
Duties include, but not limited to:
- Acts as a communications hub
- Clearly articulates shift progress, timetables of key actions, and risks on demand throughout the shift to Bakery Manager
- Monitors location specific communication channels regularly, making themselves accessible to the Bakery Manager, other Shift Leads, sales staff
- Runs shift huddles with production team members and clearly delegates all required shift tasks
- Proactively diagnoses mistakes, delays, quality breaches, and making the proper course corrections while communicating with Bakery Manager
- Keeps tabs on the sentiment, productivity, and performance of all production personnel
- Keeps informative and complete shift notes that are successfully transferred to the next appropriately qualified individual.
- Translates production numbers into a properly prioritized and delegated workflow.
- Assesses the skills and strengths of various team members and assigns tasks to fit current business needs while noting opportunities for professional development of team members
- Ability to pivot production output to match sudden changes in sales opportunities as directed by the Bakery Manager
- Interacts with Health Department officials during regular inspections, while communicating with staff to optimize results.
- Performs basic maintenance on equipment, such as dishwashers, and ensures the facility is in compliance with food safety regulations.
- Troubleshoots equipment malfunctions using manuals, company resources, and interacting directly with service technicians and/or the manufacturer.
- Functions as a Baker or Apprentice as appropriate to complete work flows, fill shift vacancies, and inspire the team
- Leads through example, only delegating tasks that a lead would be comfortable doing.
Prerequisites and Requirements:
- Must be a trained Baker at Proof
- Must have at least 6 months of production level baking experience
- Should have a mastery of Proof production workflows and prioritization
- Understands the production flow as well as the various deadlines surrounding existing and newly developed sales channels, organizing shifts and allocating resources accordingly
- Demonstrates proactive, frequent, and transparent communication with colleagues and leaders
- Must attend and participate in regular Baker/Lead meetings and team meetings
- Must work weekends and stay until successful hand-off to similarly qualified parties
- Produce a valid ID and food manager certification
Key Performance Indicators:
- Completion of Shift - All assignments completed and successfully transferred before leaving
- Quality on a shift - Including but not limited to bake color, proper proofing, and product cohesiveness.
- Shift Efficiency - Completes shifts in a reasonable amount of labor time
- Resource allocation - Properly builds production flows to streamline production and accomplish assigned tasks without wasted time
- Training rollout - Oversees and implements the Bakery Manager’s training protocol
- Waste - Responsible for lost dough or bread regardless of circumstance
