Our signature Sourdough Croissant is topped with a graham cracker streusel before baking and filled to perfection with a whipped, spiced pumpkin cheesecake filling, made from scratch. After baking, it is finished with a pumpkin spice honey drizzle and toasted pumpkin seeds. Are we repurposing old croissants to make this product?
- No. We will only be using croissants baked fresh on the same day to ensure optimal quality and flavor.
How long can this product remain at room temperature and still be safe to consume?
- We don't recommend leaving this product at room temperature for longer than 4 hours due to the cheesecake filling. We only put out small batches in our displays to avoid excessive spoilage, as cream cheese-based products can spoil if left out for extended periods.
Can I refrigerate this product?
- While this croissant is best enjoyed fresh, you can refrigerate it to extend its shelf life for 2-3 days. Keep in mind, however, that refrigeration may cause the croissant to lose some of its flaky texture and become slightly stale or dry over time.
Can I freeze this product for later?
- We don't recommend freezing this product. The high moisture content in the cheesecake filling can cause the filling to become watery and affect the croissant’s texture after thawing.
Merchandising
- Always display a cross section of the product in the pastry display. Try placing each half against each other at an angle to create a dynamic look (as pictured above).
- Do not stack these products on top of one another.
- Log the temperature and the time in the TCS (time/temperature control for safety) log along with the pizza for the day.
