Our signature Sourdough Croissant is generously filled with a rich, made-from-scratch strawberry cheesecake filling made and lightly dusted with pink snow and topped with freeze dried strawberries. Baked to golden perfection, the croissant's flaky layers harmonize with the luscious filling, creating a perfect balance of sweetness and tanginess in every delightful bite.

Sourdough Croissant
- Organic Artisan Baker's Craft (Central Milling): Forms the base of our croissant dough.
- 83% European-style Butter (Glenview Farms): Provides richness and softness to the base croissant dough, while also being necessary for the lamination process.
- White Granulated Sugar (C&H): Sweetens the dough slightly, while also assisting in the final color as the dough browns during the bake.
- Harriet: Serves as the primary leavening agent and source of fermentation for the dough.
Strawberry Cheesecake Filling
The heart of the croissant, offering a rich, creamy filling that balances sweetness and tang. It's made from two components:
- Strawberry Cheesecake Base: A smooth blend of cream cheese, sugar, wild strawberry compound, and a touch of corn starch to create a luscious cheesecake center with a bright strawberry flavor.
- Stabilized Whipped Cream: We whip heavy cream with gelatin powder and sugar to add a light, fluffy texture to the filling, ensuring stability while keeping the filling airy and creamy.
Strawberry Glaze

Are we repurposing old croissants to make this product?
- No. We will only be using croissants baked fresh on the same day to ensure optimal quality and flavor.
How long can this product remain at room temperature and still be safe to consume?
- We don't recommend leaving this product at room temperature for longer than 4 hours due to the cream cheese filling. We only put out small batches in our displays to avoid excessive spoilage, as cream cheese-based products can spoil if left out for extended periods.
Can I refrigerate this product?
- While this croissant is best enjoyed fresh, you can refrigerate it to extend its shelf life for 2-3 days. Keep in mind, however, that refrigeration may cause the croissant to lose some of its flaky texture and become slightly stale or dry over time.
Can I freeze this product for later?
- We don't recommend freezing the Strawberry Cheesecake Croissant. The high moisture content in the cream cheese and strawberry glaze can cause the filling to become watery and affect the croissant’s texture after thawing.
Merchandising
- Always display a cross section of the product in the pastry display. Try placing each half against each other at an angle to create a dynamic look (as pictured above).
- Do not stack these products on top of one another.
- Log the temperature and the time in the TCS (time/temperature control for safety) log along with the pizza for the day.
