Our Rye Loaf honors the rich heritage and tradition of rye as a staple food in many cultures, bringing its timeless flavors to Arizona. A recipe crafted by Jon and his esteemed friend and master baker, Sat Karam, this artisanal loaf is the first loaf to be completely comprised of in-house milled flour. It combines whole grain Rye and White Sonora flours with a hearty Super Seed Mix—organic cracked wheat, cracked rye, sunflower kernels, sesame seeds, brown flax seeds. The result is a robust, flavorful loaf with a satisfying texture, perfect for hearty sandwiches or as a standout centerpiece at any table.

Frequently Asked Questions
Why are preorders so important?
- Preorders give our customers an opportunity to have a part of Proof on their holiday table, that's why It's important we present our best foot forward while fulfilling all orders! Additionally, preorders play an important part in our sales and growth, creating more opportunity for us and the bakery in the future!
Will preorders be fresh?
- Our preorders will have special production times that is later in the day and possibly overnight to ensure preorder fulfillment is as fresh as possible! Other than rye loaves, which take an entire day to cure after baking, all items will be baked 12 hours or less prior to being distributed.
Can we make any exceptions or changes for the fulfillment date?
- We are unable to fulfill holiday preorders any other day than what is specified. Orders must be picked up within the fulfillment times.
- Anyone inquiring about why we cannot change pre-order fulfillment date or accept pre-orders in general: Bakeries using commercial yeast can make and bake product all within a day. Because of the lead time on sourdough production, we do not currently have the proprietary technology to track and produce separate pars, and if something were to go wrong it would be near impossible for us to be able to fulfil the pre-order. We are working on a more meaningful pre-order experience, but that requires proprietary technology as sourdough bakeries are incredibly unique and do not operate on the same timeline as a normal bakery. We are working on this in the background, but realistically we will not be accepting pre-orders ahead of time anytime in the near future, which is the same reason we cannot change the pre-order date. This is the same reason we do not have wholesale relationships. This problem should always be highlighted by the fact that we are an all-sourdough bakery, and the benefits of that outweigh the fact that we cannot accept pre-orders.
Will preorders be available for local delivery, like our online orders?
- Preorders will be available for pickup only, no local delivery. This is to minimize the possible pain points as we will only have enough product to fulfill preorders once.
Will the same holiday products (brioche rolls, cinnamon rolls, etc.) be available for on-demand online ordering?
- No, these will not be available.
Will there be any product for sale, or is it preorder only?
- All products on the preorder list will have a limited quantity available for sale on the day we are fulfilling orders. However, there is no guarantee a product will be available for purchase. Preorders are always the best way to guarantee you're able to get your hands on a specific product.
- Not all products are available for preorder. A lot of the preorder products are long-established favorites that customers wish to reserve for their holiday table, customers often purchase other items and decide on them when they visit the bakery on pickup day (the day before the actual holiday).
Why is Country Sourdough not on the preorder list?
- Our Centerpiece Sourdough is the Country Sourdough, but in a larger more decorative Miche shape perfect as a centerpiece on the holiday table.
- However, we will be baking record amounts of Country Sourdough for sale at our bakery locations when customers come in to pick up their orders.
Can customers preorder smaller amounts, or 6-packs only?
- All preorders are as is- meaning we cannot make adjustments to the number of items per pack. There will be items available for purchase in the bakery each day leading up the holidays, so there will be plenty of opportunity to purchase smaller amounts of products online or in person that are not preorder only!
Are all bakery items available for preorder?
- The bakery will have several special pastries and other items that we cannot have on the preorder menu but that will definitely be available on that day such as the Pumpkin Cheesecake Croissants.
Can customers alter or customize the pastries that come in the preorder (i.e. no cream cheese frosting, no powdered sugar, etc)?
- As we will be fulfilling a large quantity of orders in a short period of time, we will be unable to accommodate any customization requests.
Why isn't the centerpiece a stencil like it has been in the past?
- We feel that the scoring allows us to create a more consistently beautiful loaf and feels truer to the heart of Proof. Previously, many holiday centerpieces suffered from the stencil patterns becoming ruined from all the movement in the baking and packaging process.
Can a preorder be cancelled?
- As a general rule, we will not accept cancellations for preorders at all, but if a situation demands a GM may give approval for a cancellation on a special case basis. As we need ample time to precure ingredients and supplies to fulfill preorders, cancellations will not be considered within a two-week window of fulfillment dates.
Tips for Merchandising & Communication
- Ensure preorder signage is displayed at the register.
- Include preorder QR slips in each bag given to customers (unless the customer has indicated they aren't interested or have already placed a preorder).
- Signage is only half the battle. Engage customers in conversations about the upcoming preorders, either as a conversation starter or as a segue from asking about their holiday plans.
- Ask our customer community if they have checked out our Holiday Menu on the website. Let them know they can reserve some of their favorites for the day before Thanksgiving now and suggest that it may be a good idea to do so!
- Build excitement around our holiday-exclusive pastries and ensure customers know preorders are the best way to secure them.
- Aim to inform all customers about upcoming holiday preorders to ensure everyone has adequate time to place orders.
Tips for Busy Days

Plan ahead for known busy days - Business and production will continue to pick up as the holidays get closer. The following days will be especially hectic as people will be out preparing for the holidays and picking up preorders.
- Wednesday 11/27 - preorder pickups & day before Thanksgiving
- Saturday 12/23 - preorder pickups
- Sunday 12/24 - Day before Christmas
- Sunday 12/31 - New-Years Eve

Stay Organized and Prepare in Advance
- Stock and reset the FOH to standard at the end of each day to ensure we are set up for success the following day.
- Pre-fold boxes and keep backups of other packaging supplies at the ready to restock in a moment's notice.
- Have a dedicated area for preparing both online orders and preorders.
- Keep preorder lists updated and mark off customers as they pick up items.
- Before handing out any online or preorder, ensure all items are in the bag.
- Utilize the store iPad to mark all preorders and online orders as fulfilled after they are picked up in Square POS.
- Open Communication - Keep the team informed about priorities and any changes in real-time to maintain coordination.
- Maintain composure during busy times - There may be times where the amount of traffic in the bakery feels overwhelming- there's a lot of moving parts on busier days! Sometimes things may go awry, or it may feel busier than we can handle. In moments like these, remember the best thing to do is keep calm and communicate when you need assistance and most importantly, have fun!
- Remain Service Oriented - It's easy to get caught up in the moment. Everyone, including those on the production line, should remain attentive to the volume of customers and be willing to jump into help at a moment's notice.
- Take Short Breaks - Encourage team members to take brief breaks to stay refreshed and hydrated throughout the day.
- Review and Reflect - After the busy period, remember to debrief and celebrate what went well and reflect on what can be improved for next time.
